Nutritional yeast is made from the Saccharomyces cerevisiae species of yeast, which is inactivated through heating and drying. Thus nutritional yeast is not suitable for leavening purposes, yet its high protein, vitamin and mineral content make it worth including in diets.

Significance, effects: Nearly half the energy content of nutritional yeast is provided by its protein content, containing all nine essential acids in good quality. It also contains a small amount of fat and an even smaller amount of sugar. It is particularly rich in B Vitamins (particularly Vitamin B12), along with its outstanding zinc and selenium content.
Use: Nutritional yeast is mainly used for flavoring purposes. Thanks to its flavor reminiscent of parmesan cheese that it provides without any additional spices or flavoring, it is mainly added to pastas, soups, sauces, homemade breads and pastries, crackers and salads. When mixed with cold pressed oils, it yields a delicious cream that can be served on toast
